Made in Japan around 1950-1960. Ideal for slicing fish, for sushi and sashimi.
The blade is hand-forged using San Mai technology from high carbon steel in the core and two layers of steel with less carbon, which provide protection against breakage and chipping. This combination allows the blade to have maximum hardness and maintain the wild sharpness of the blade. Sharpening is a one-way Kataba. Installation of the blade is a hinged blind blade Narrow Tang. The blade has scars, stains, scratches and manufacturer's seals/tags. The blade has a minimum bend on the upper edge of the shoe, the working plane all smoothly. Sharpening is complete, the blade is very sharp.
The handle is made of polished magnolia, fixed with a steel cord. On the handle there is a mark of the manufacturer.
