Santoku kitchen knife "Savage VII" is a rare example of the author's solution for the classic Santoku knife. Hand-forged, made in a single copy. It is a universal chef knife, with double-sided sharpening and a shorter, wider blade. It's equally good for vegetables, fish and meat. The light weight of the blade provides maximum ease of use, which is suitable for both men and women.
The blade is made of 150Cr14 carbon steel, with a zone hardened working edge, which makes it strong and has a long lasting ability to hold the sharpening (Kirenaga).
Master: George WAUGH (France, 2019).
The handle is made of Ash. The shape of the handle is classic oval. Installation of the blade is horsed deaf "Narrow Tang".

Great knife

I bought this knife one week ago so I had my fair time of testing it in the kitchen.

I think this is a great knife, well balanced (sits well in the hand), lovely shape, suitable for chopping as you can use your index finger to control better the blade. In the light, you can see some blueish reflections on the blade as a result of the forging and hardening I guess which gives personality to the knife.
The handle is really nice and rustic., better than I expected from the pics.
On the flip side, I felt that the tip of the blade is very well sharpened while the middle part not so much, in the beginning, I had some difficulties with chopping even onion or tomatoes but then I sharpen it again on a water stone and works well now.
Overall, a very good knife, and I hope I can use it a lot in the future together with my other rustic tools such as cast iron pans and pots.
